Sundried Hot Pepper Paste
Harissa (hah-ree-suh) is an aromatic paste of sun dried peppers and spices from the Mediterranean and desert dwellers' culinary traditions. These ancient cooking traditions continue to withstand the test of time. According to an old Tunisian wives' tale a husband can judge his wife's affections by the amount of hot peppers she uses in her cooking. If the food becomes bland a man may believe his wife no longer loves him. Add a teaspoonful to the base of your favorite dish, dilute with olive oil to spread on bread, mix with mayonnaise to give it a kick, add to eggs before cooking, or use to marinate meats and seafood.
